Todd Bellomy, the former sake master at Dovetail Sake in Waltham, finally launched his own sake brewery, the one and only in MA, in Medfield. He is now the owner and the sake master, brewing the first batch to finish by Memorial Weekend. I heard there will be a ramen pop up at the opening!

He made one of the best sake in the US (I would say top two) at Dovetail Sake. This time, not only he makes the best, but also makes the tap room approachable and the price reasonable, using 70% rice milling rate. Logo and rice bags as you see in the picture stand for Si-Fi theme with his FSS brand. He showed me the modern equipment that makes sense for sanitation standard and casually high quality set up.

My hobby is collecting photography that documents Japanese life from Taishō to Shōwa (1912-1989).


I started collecting food-related images, inspired by seeing Youji sans cooking. Here’s a color slide from 1970s Shinjuku; the chef is busy making Ebi Yaki (or is there another name?).


Any comments or interesting things you might see? I’m curious 🧐.


For word grocery Kushi = skewers Yaki = Grill on a yakidai in this case. (Basically it means cooking by direct heat) Age = fry Tori = bird, chicken, poultry However, origin of yakitori isn't chicken. I believe it was more like wild, game birds Now this: Yaki-tori Kushi-yaki Kushi-age You know what they actually mean now! Robata is totally different culture (in up north region and cooking fish but not meat), except the fact for the similar cooking method by infrared heat. Robata food is not going to be smoky if you have a good skill on that.

Just visited Farthest Star Sake, the only sake brewery by the top two sake brewer in the US, Todd Bellomy! More to follow later today.

What kinds of sake does FSS brew? I tried looking online.

So what is it called? It's "Chu-gaku Imo" (Yamadai Foods) instead of "Daigaku Imo" because of their size difference. Chu-gaku = highschool, Daigaku = University lol

Imo means potato.

Daigaku Imo was created i.n Taisho Era. (Rod,!) It says the campus was Tokyo University.

It's a piece of Yo-shoku.

So this is Taishō era Yoshoku. I wonder what the next size up 😉
